FRIED EGG SAMMICH!

I love eggs. I love eggs. I looooove eggs.

Whenever I’m feeling uninspired, I always find that eggs are a good go-to. I’m the type of girl who will fry up a couple of eggs for dinner, and be dang happy about it! In fact… I do this more often than most would consider normal… psssh. whatever. eggs are awesome.

So, after a tiresome day at work, I went over to Tyler’s, had a glass of wine (*insert blissful sigh*), and decided that a pile of dishes a mile high was just out of the question (I make a BIG mess when I cook). So- simple it was: one frying pan. booyow.

Here’s how it went:

Fried Egg Sandwich #1

you’ll need:

2 slices of bread
1 red onion
2 tbs butter
3 tbs balsamic vinegar
1 tsp sugar
salt and pepper
2 slices of cheese (I used smoked Gouda)
1 tsp olive oil
2 eggs
fresh basil

1) Thinly slice the red onion and put it in the pan with 1 tsp of butter over medium high heat. Cook until translucent. Add the balsamic, sugar, and salt and pepper. Cook until tender. Remove from pan and keep warm.
2) Butter the bread with the remaining butter. Place into the pan over high heat and allow to toast. Add cheese onto one slice so that it can melt a bit. Remove and keep warm.
3) Add the olive oil to the pan, crack the two eggs, and fry those babies up! I recommend doing them over easy (or the easier side of medium) so the yolk is still golden and a little runny.
4) Assemble that sammich!!! Put the bread down, top with basil, then the eggs, then the onions and cheese, and finally, the final slice of bread!

  1. Cute graphics. Sounds yummy. Hopefully you made two of these sammiches. One for you and one for Tyler. Oh, and maybe a half for Olive?
